Frozen lima beans or butterbeans
1lb peeled shrimp
1 cup frozen onion mix
½ c shallots
¼ c parsley
Make a roux with 1 spoon of oil.
Add seasoning. Simmer.
Add shrimp and cook until shrimp is pink.
Add beans and enough water to cook the beans and thicken the gravy.
If you want to add an extra touch of rich flavor, you can add butter to taste when you’re simmering the roux. Most frozen onion mixes have plenty of salt in them already, so you’ll probably find this dish savory enough without adding any more sodium. When your butterbeans with shrimp are ready, simply spoon them into a casserole dish and slip it inside one of our Designer Casserole Carriers!
